Have A Healthy Halloween

Although it doesn’t quite feel like fall yet here in Georgia it certainly feels like Halloween season is upon us! At Pea Pod we love treats, but treats does not always have to mean loading up on sugar and candy. Colorful costumes, festive games, great food and spending quality time with family and friends are the treats we look forward to most this Halloween. We’ve compiled a list of healthy snacks and treats that are sure to please your little pirate, princess, spider-man or dinosaur this Halloween. We’ve also included our personal favorite recipe for Mummy Pizzas from the book Quick and Easy Vegan Celebrations. These pizzas are dairy and egg free and can easily be made gluten free by swapping out traditional English Muffins for gluten free English muffins.
Mini-Mummy Pizzas
6 English muffins
¾ cup Pizza Sauce
One 3.5-ounce package vegan mozzarella cheese, sliced into long thin strips
8 black olives, sliced into ¼-inch disks
Preheat the oven to 400oF (or 350oF if you are using a toaster oven).
Split the English muffins in half. Spread 1 tablespoon of Pizza Sauce on each half
Lay strips of cheese across the muffin for the mummy’s wrappings and place olive slices near the top of the pizza as eyes.
Place mummies on a baking sheet and bake for about 10 minutes or until the cheese is melted and the muffin is toasty.
Cook’s Tip: Usually you want gooey melted cheese on a pizza, but for these pizzas keeping the strips of cheese distinct helps them look more like mummy wrappings. Vegan cheese doesn’t have a reputation for melting quickly, but just in case yours decides to go rogue, check on your mini-pizzas around the 7- to 8-minute mark to make sure your cheese strips are still intact
